The Santa Margarita Water District is responsible for the public sewer system and is required by the State of California to prevent the discharge of Fats, Oils, and Grease (FOG) into the system through the implementation of a FOG Program for Food Service Establishments.
The production of fats, oils, and grease from restaurants is a leading cause of sewer overflows and spills. These sewer spills have the potential to enter stormwater drain systems and pollute our waterways and ocean. By having rules in place to prevent and capture grease in an effective manner, the aim is to reduce pollution and prevent any FOG-related spills, overflows, or clogs in the sewer system.
